KUNU GEDA: The Ultimate Rice Delicacy

Kunu Geda is a popular Northern pudding delicacy made from rice and groundnut. The name Kunu Geda translates to Groundnut Drink. In older times millet was used in place of rice to prepare the delicacy, but it has evolved over time into a more modernised food with rice becoming the major ingredient for its preparation.

Although the ingredients are simple to apply, the cooking procedure requires culinary skills as well as a certain level of expertise. Without the application of these skills, it might turn into ‘Tuwo Shinkafa,’ which is another Northern dish that has similar cooking procedures.

Firstly, because the rice used to prepare this meal is quite different from the regular rice, and the groundnut has to be toasted for best results. Other ingredients used in the preparation of this dish are water, sugar, salt, ginger, and sometimes clove. There are varying ways through which individuals prepare the meal.

The most common method is when the groundnut is roasted and ground into a smooth paste, which is then mixed with cooked rice, spices, and sugar. The mixture is simmered in water until it thickens, creating a creamy texture.

In some parts of the North, the rice is blended with the groundnut and other ingredients like ginger, clove, etc. It is then sieved before cooking, while others leave the rice as it is so there’s something to chew on. Some other cultures use fresh groundnuts without toasting. Different preparation methods but similar results.

The meal can be compared to a bachelor with lots of great bridal matches or even a polygamous groom, as it can be combined with hot masa, roasted meat, or very spicy suya. In some cases it can be a standalone meal as it contains a high level of protein, carbohydrates, fats, and vitamins.

Aside from being a significant cultural dish, Kunu Geda has lots of health benefits for the body. Groundnut in itself is a good source of protein, making it a go-to option for vegetarians; it also helps in managing blood sugar levels and helps with inflammation. Groundnut also contains healthy fats and minerals like iron, phosphorus, and magnesium, which are essential in maintaining strong bones.
